TONCHIN (ANAN SUGENO)

Anan Sugeno sits down with THE LIVE ROSE to talk about his journey opening up Tonchin.


It's 10:32 am and I just arrived off of a flight from Boston and landed in New York. I was so excited to sit down with Anan to talk about Tonchin - a restaurant I've been hearing so much about even while being based in Boston.


Ramen specialty restaurants have been having somewhat of renaissance lately as everyone has been clamoring the phenomenal dish. Is it the last year of people becoming very sick? Maybe the quality of food and efficient price? Whatever it is, Tonchin is thought to be at the top of Ramen food chain. Upon arriving to the Brooklyn location I saw what looked like Anan just departing the restaurant for a moment to grab something from the local convenience store in which we greeted each other.


As we entered the restaurant I immediately took notice of the atmosphere. We set up the meeting to be before opening which was perfect as I got to spend some time talking about Anan's life prior to opening up Tonchin. We touched upon his childhood growing up, the origins, Tonchin, the vision for Tonchin, and also a bit about his newest foray of opening up Tonchin in Los Angeles. Anan is a very chill, humble, and down to earth guy but shows great discipline in his execution of his plans for Tonchin. I'm excited to see what unfolds in the near future and looking forward to visiting Tonchin once again to enjoy some of the amazing food.
